creamy curry potatoes

Simple and hearty potatoes to fill your belly



  1. finely dice the potatoes
  2. in a skillet on medium-high heat, add potatoes, oil, coconut milk, and water
  3. add seasoning (eg salt, pepper, turmeric, cinnamon, cumin) to taste, stir
  4. reduce the curry sauce until the potatoes are cooked and the sauce is thick, about 15 minutes
  5. serve with roasted veggies, stir fry, etc. makes 4 servings
