creamy curry potatoes
Simple and hearty potatoes to fill your belly
ingredients
- 3 medium potatoes
- 1 can coconut milk
- 2 tbsp olive oil
- 2 cups water
- curry seasonings to taste
process
- finely dice the potatoes
- in a skillet on medium-high heat, add potatoes, oil, coconut milk, and water
- add seasoning (eg salt, pepper, turmeric, cinnamon, cumin) to taste, stir
- reduce the curry sauce until the potatoes are cooked and the sauce is thick, about 15 minutes
- serve with roasted veggies, stir fry, etc. makes 4 servings
