banana pancakes

Sweet and straightforward vegan pancakes.



  1. melt the coconut butter
  2. mix the flour, water, and coconut butter until a batter starts to take shape
  3. mix in the banana until incorporated, and add salt and cinnamon to taste
  4. heat the oil in a large skillet on medium heat until it's hot enough to immediately start cooking the batter
  5. drop scoops of batter into the pan to make pancakes about 4 inches across
  6. flip when the edges get crispy, 4-5 minutes; cook another 4-5 minutes on the other side
  7. serve with yogurt and elderberry syrup! makes enough for 2-3 people
