banana pancakes
Sweet and straightforward vegan pancakes.
ingredeients
- 3/4 cup flour (gluten free or otherwise)
- 1 cup water
- 1 ripe banana
- 2 tbsp coconut butter
- 4 tbsp olive oil
- salt, cinnamon to taste
process
- melt the coconut butter
- mix the flour, water, and coconut butter until a batter starts to take shape
- mix in the banana until incorporated, and add salt and cinnamon to taste
- heat the oil in a large skillet on medium heat until it's hot enough to immediately start cooking the batter
- drop scoops of batter into the pan to make pancakes about 4 inches across
- flip when the edges get crispy, 4-5 minutes; cook another 4-5 minutes on the other side
- serve with yogurt and elderberry syrup! makes enough for 2-3 people
